- The materials and construction metal is thin. The lid on the Brinkmann 810-7080-8 Smoker fits loosely because there is no vent so it helps with the smoke. But because the metal on the smoker is thin, on cold or windy days, it can be difficult for it to maintain an adequate temperature on long smokes. The Brinkmann 810-7080-8 Smoker runs at around 200-210 degrees. This will increase your cooking time considerably, since it is not quite hot enough. On hot days it will run at 230- 240 degrees but does fluctuate with the temperature. Some people have installed a heat blanket for the Brinkmann 810-7080-8 Smoker to maintain temperature levels.

However there are some people who are disappointed because they thought the Brinkmann 810-7080-8 Smoker was a great value for a low maintenance electric smoker but they found the heat escaping was too much of a problem and affected the overall cooking method by lack of heat over too long a period of time, and some people returned their Brinkmann 810-7080-8 Smoker and looked for a different one.
However other people picked up this smoker for a good price. Overall this is a good smoker. Assembly of the Brinkmann 810-7080-8 Smoker can sometimes take a while since the handles didn't match up with the holes on the smoker body and lid so these had to be slightly hammered at the handles to get a suitable fit. Otherwise assembly was easy.
The food in the Brinkmann 810-7080-8 Smoker has a reputation of coming out reasonably okay though, especially salmon. For the majority of the hill tribes people of Northern Thailand survival is at a subsistence level; they cultivate what they eat with little surplus to sell. They are opportunisits though and only a few years ago poppies were a popular cash crop! These little horrors have now been replaced by flower cultivation of a less toxic kind, tea, coffee and other products as a result of a project inspired by the King of Thailand. Hill Tribes people also utilise long-established skills to produce cultural handicrafts which for sale.
